  • 2 skinless chicken fillets, sliced

Instructions:

Heat the avo oil in a stir-fry pan or a wok. Add the sliced chicken fillets and spice and stir-fry until browned. Add the stir-fry vegetables and stir-fry until done. Serve on a bed of couscous.

Ingredients:

  • 500g (1lb) dried pinto, butter or kidney beans
  • 1.5 l to 2 l water
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 2 garlic cloves, chopped
  • 375ml reduce sodium fat free chili beef stock
  • 500g chopped tomatoes
  • 3 chilies, chopped finely
  • 250 ml hot water
  • Rye bread

Instructions:

Drain the beans and place in a large pot. Add the water, thyme, marjoram and garlic. Bring to the boil, reduce the heat to low and simmer until tender (up to 2 hours). Don't let the beans boil dry, add more water if needed. Using a potato masher, mash the beans with their liquid. Add the stock, tomatoes, chilies and hot water. Stir well and heat for at least 60 minutes to blend the flavors, stirring occasionally. Serve with the rye bread.
